Coconut, Meet My Little Friend Lime

One of the bonuses of owning a bakery is that you have to try out the new recipe before you share it with your customers. I mean, we want to make sure you are getting the most delicious baked goods right? Well, we have a new one coming soon!

I have wanted to make a coconut cake with a lime curd for some time and my birthday finally presented the perfect opportunity to test it out. Adapted from several recipes, with a twist of lime curd and the magic of cream cheese frosting and what do you get? The most sublime cake you have ever tasted. If you like coconut and you like lime, you will not be dissapointed.

The cake was unbelievably moist, the texture was fantastic, and the lime curd between the layers of coconut cake brought it all together. Frosted with our famous cream cheese frosting and sprinkled with fresh coconut flake, this cake was out of this world. Hmmm, I bet it would make a delicious cupcake too!
